Spicy Boiled Eggs
Crazy simple recipe - but lifts the humble boiled eggs by a lot.
- Boiled and halved eggs (I usually boil for 12-13 minutes after the water starts boiling).
- Oil (preferably, black sesame)
- Onions - sliced thinly - cook at low flame in oil until they start browing
- Chow mein sauce - I use the one from Masterchow, which has 0 additives
Add some sauce to the onions, and switch off the flame. Pour over the eggs, and pack for any time snack!
Boiled Eggs with Guacamole
Though I started with the previous recipe (Spicy Boiled Eggs), but then I made this one day for Aoyon's packed breakfast, and this is now a complete fam-favorite. I eat guac with my omelette, while he packs it for office with boiled eggs. This has made breakfast more filling and increased the satiety-factor. Definitely reduced my morning post-yoga sugar craving.
Masala Idli's (2 ways)
- Idli - regular sized cut into 4 pieces, or mini idlies - beetroot flour can be added to batter for fun
- Ghee
- Mustard seeds
- pin of heeng
- curry leaves
- Podi Masala (i used the one i made with peanuts - recipe on dry chutneys page)
Recipe #2 Tomato Idli
- Tomatoes, ginger, chillies - create paste in grinder jar
Some other things that I pack for daughter's school (recipe elsewhere on the blog):
Burgers
Best made when I have made rajma the previous day.
Pasta
Appe
Came across this appe recipe recently - am planning to try it for tomorrow's school lunch.
Corn Paneer Paniyaram:
Take diced paneer + cooked corn + chilli powder + coriander + salt.
Mix well and now add dosa batter and mix again.
Now pour this in a paniyaram pan and cook well. Turn and cook the other side as well.
KIWI CHUTNEY: Grind Kiwi fruit + coconut + coriander + ginger + green chillies + salt + water.
Update: I actually ended up making a variation - added grated carrots, dill and mushrooms to dosa batter. Made appe with a small filling of paneer. Came out pretty good.
