Dry chutneys to keep in a jar for a rainy day

 

I really like dry chutneys/chutney powders/podi - keep some handy for a lazy day, then add them to rice/mix in a dry vegetable dish/sprinkle on dosa for a quick meal.


Peanut-chilli-sesame-pumpkin seeds podi

(Measurements are very rough since the original recipe had none. I just ballparked everything but it turned out great!)

Exactly 4 ingredients:

  • Peanuts - 1/4 cup - dry roast in a pan
  • Red chillies -  6-7 - dry roast along with the peanuts
  • sesame seeds - 1/8 cup - dry roast after taking out the peanuts and red chillies
  • pumpkin/sunflower seeds - 1/8 cup - dry roast separately at the end
Just remembered, I also added some flaxseeds since I had them handy and I earlier had a flaxseed-red chilli chutney from Two Brothers which was amazing.

Let everything cool down, and then grind on the lowest setting. Pack in a jar and use anywhere!

Some ideas that I picked up:

This can be frozen, and to make a chutney, add some dahi and water.
Optional: Top with  tadka of mustard seeds, turmeric powder, curry leaves. 
Van also add some finely chopped onion& coriander. 

Curry leaves podi

  • 3 tbsp urad dal
  • 3 tbsp chana dal
  • 15 red chillies
  • 1 tsp cumin & coriander seeds
  • Tamarind (cherry size)
  • 10 garlic cloves
  • 2 cups curry leaves
  • Salt + Oil

Roast everything in a little oil, and grind together. Goes with everything from rice to dosa to sandwiches!
