Summer Menu

Summer Dinners

Trying to design a simple dinner menu which I can prepare in advance, say by 4 PM, and leave in fridge. So, no roti's, only rice which I can make hot at dinner-time. I want to go swimming in evenings, so this will make that happen. Also, the weather has got too hot now so this will be a heat-friendly dinner menu too.

My plan is to pre-cook the curry at lunch time, and get the cook to make the dry vegetable. Let's see how it works out.

  • Tok daal-rice + aloo bhaji
    • Tok daal anyways tastes best when cooled. So, this is a perfect summer dinner.
  • Sambar-rice + karela
    • I think Karela is a perfect summer vegetable.

  • Kadhi-rice + Arbee
    • Will try Gujarati style Kadhi since that is lighter.
  • Khichdi + roasted paneer + salad + raita
    • Ideal for days on which the cook is missing.
  • Roasted Veggies + Mint cheese dressing

Summer Breakfasts

  • Oatmeal with strawberry Compote, nuts and seeds
  • Oats-Chia pudding with peanut butter
  • Savory chia pudding with cucumber and coconut

Summer Lunches

    • Brown rice pulao + raita
    • Coconut rice + sauted paneer
    • Vegetable pancake as a sandwich (recipe on Offbeat Meals)
    • Yogurt chana bowl
    • Savory chia pudding (last 2 recipes on Cool Summer lunches)

    Summer Desserts

        • Berry mango chia pudding 
        • Peach chia pudding
