Gochujang Pancakes
Tried these, and they were amazing. I replaced bread flour in the original recipe with rice flour (can also try amaranth flour). In fact, very little flour was used to make the recipe - it was mostly vegetables, and gochujang added a very nice and unique taste. I used cabbage, carrots, onions and potatoes, and the pancakes came out really good.
Dipping Sauce:
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp gochugaru (Korean pepper powder) - i used crushed pepper/chilli flakes
- 1 tsp sesame seeds - toasted - they are a must - add a very nice flavor.
Vegetables:
- Basically whatever is there in the fridge - i will also try adding some greens
- 1/2 cabbage
- 1/2 zucchini/courgette
- 1/2 large carrot
- 1/2 large potato
- 1/2 onion
- 1 mushroom
- 1 green chilli
- 5 spring onions
Pancakes
- 1 cup rice flour
- 180 ml (3/4 cup) water
- 1 tbsp gochujang
- Oil for frying
- Toss julienned vegetables together.
- Combine flour, water and gochujang along with 1/2 tsp salt and whisk well. Then mix the veg through the batter until everything is evenly coated.
- Fry the pancake for 4-5 minutes or until golden then fry for another 4-5 min on the other side.
Vegetable pancakes s/w variation
- Make thin pancakes with grated potatoes, carrots, zuchhini, coriander and cheese. Use this as a wrap, with tomatoes and cucumber slices inside.
Steamed Cauliflower with dip
- 100 grams cauliflower (washed and steamed)- Salt- Red chili powder- 1/4 tbsp Garam masala- 1/2 tbsp Cumin (jeera) powder- 1/2 tbsp Garlic powder- 3/4 tbsp Onion powder- 1 small tablespoon oregano- 1/2 small tablespoon chili flakes- Lemon juice- 1/2 Olive oil
Tofu dressing:- 100 grams Firm tofu- 1 and 1/2 lemon- 2 cloves garlic- 1/4 tablespoon sesame seeds- Black pepper- Beetroot (optional for one flavor of tofu dressing)- Sriracha sauce (optional for one flavor of tofu dressing)
Garnish: optional- Chopped coriander- Pomegranate seeds- Mixed seeds - Sesame seeds- roasted peanuts

- 2 cloves garlic
- 1/4 tablespoon sesame seeds
- Black pepper
- Beetroot (optional for one flavor of tofu dressing)
- Sriracha sauce (optional for one flavor of tofu dressing)
Garnish: optional
- Chopped coriander
- Pomegranate seeds
- Mixed seeds
- Sesame seeds
