Well, the Doc has asked me to go on a gluten-free diet to deal with my inflammation issues.
And I can't live without biscuits/cookies, can I?
So I am on a hunt for good gluten-free recipes - here goes the first one that I tried. These are already a hit with the family.
Chocolate-chip oat cookies
- 1 1/2 cups oats flour - I always have steel-cut oats handy, so just grind them for 5-10 seconds, to have a rough flour
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 80g regular salted butter softened
- 1/2 cup powdered jaggery
- 1 tsp vanilla extract
- 1-3 tbsp milk (if needed)
- 1/2 cup dark chocolate chips
Bake for 10-12 minutes at 180 degreees C.
Makes 12 cookies.

Changes to try:
1. Reduce quantity of butter - since the recipe already has almond flour, should need less fat from outside.
2. Try without baking powder/soda, or reduce the quantity.
3. Add flaxseeds, for binding, and for goodness.

Today I tried a variation - replaced chocolate chips with cranberries, and added some ground almonds, pista and flaxseeds. Came out super good.

This is now my absolute go-to recipe - the one I almost 2-3 times a month. But there are some minor changes, so sharing the current version here:
- 1 cup oats flour - I always have steel-cut oats handy, so just grind them for 5-10 seconds, to have a rough flour
- 1 cup almond flour
- 3/4 tsp baking powder
- 1/3 cup cold pressed coconut oil
- 3/8 cup powdered jaggery (planning to bring it down to 1/4 cup)
- 1/2 cup dark chocolate chips/chopped chocolate
- chopped berries/nuts - anything available at the moment

Tried it today, came out amazing. I replaced sugar with jaggery, and used a little less butter than was originally specified.
2¾ cups almond flour
¾ tsp kosher salt (I forgot to add this, let's see if it matters)
½ tsp baking soda
100-120g butter, at room temperature (original recipe had 140g)
1 cup powdered jaggery
1 egg
vanilla
340 grams bittersweet chocolate chips (needless to say, I never measure these, add whatever quantity I feel like)
Makes 16 medium sized cookies.
Bake for 18 minutes at175 degrees Celsius.
Got a bit burnt at 18 minutes, am planning to bake for 15 minutes next time.
I had also planned to add some crushed nuts but forgot this time.
Oats cookies with apples - No butter/Oil!
(To be tried next - for me and daughter)
2.5 cups rolled oats - powder coarsely in grinder
1 tsp baking powder
1/4 tsp cinnamon
2 tbsp cocoa
2 medium apples - roughly chop in mixer, no need to peel
2 tbsp water (30 ml)
3 medium eggs - mix yolks first in cookie mix. whisk whites until stiff peaks, and then mix gently at the end
1 tsp vanilla extract
60 g dates/raisins - roughly chopped
a pinch of salt
bake 25 minutes at 180°C

Almond flour cookies
My new favorite recipe - uses almond flour and maple syrup
2 cups almond flour
1/2 teaspoon baking powder
1/4 cup butter
3 tablespoon maple syrup
1 teaspoon vanilla extract
1/2 cup chocolate chips
I replaced butter with oil today, will post how they came out.
Update: They came out just fine. But definitely butter is better. :)
Makes 12-13 cookies. 180C, 10-12 minutes

Amaranth flour cookies
Ingredients:
- 2 Cup Amaranth flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/2 tsp Ginger
- 1/2 tsp Cinnamon
- 1/8 tsp Cardamom
- 120 gram Sugar
- 1/4 cup Butter, melted
- 1/4 cup Maple syrup
- 1 cup Carrots, grated
- 1/2 cup Walnuts
- chopped1/4 cup Raisins
Banana Cookies
Ingredients:
- Almond flour - 1.5 cups
- Bananas - 1/2 cup mashed bananas (roughly 1.5 bananas)
- Baking powder - 1/2 tsp
Optional flavours:
- Vanilla extract
- 2-3 tbsp Chocolate chips
- 2-3 tbsp Shredded coconut
- 2-3 tbsp nuts - Chopped walnuts, pecans, almonds
- Spices - Cinnamon, Ground ginger, Chai spices or pumpkin pie spices
- Lemon zest
- Sea salt
- Poppy seeds
- 1 tbsp maple syrup
175 C, 13-15 minutes, makes 7 cookies
Almond-Ragi cookies

- 1 cup almond flour
- 1 cup ragi flour
- 1/2 cup gur powder - can be reduced to 1/3 cup since there is maple syrup as well.
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 1 egg
- 1 tsp vanilla
10-15 minutes bake

Seed cookies

Was looking for some seed cookie recipes and came across this one. I changed the flour from wheat to almond to make it gluten free, and reduced the butter a bit. Also, replaced peanut butter with the dark choco peanut butter since I had it at hand, and skipped adding the chocolate chips at the end. Added a LOT of seeds which made me happy :)
- 50-60g unsalted butter, softened
- ⅔ cup jaggery
- 2 tbsp honey
- 1 large egg at room temperature
- 1 tsp pure vanilla extract
- ¼ cup 60ml smooth regular peanut butter
- ½ cup rolled oats
- 1 cup plus 2 tbsp almond flour
- ¾ teaspoon baking soda
- ½ teaspoon salt - didnt add it since my seeds were mildly salted
- ⅓ cup 50g chopped walnuts plus extra for topping - skipped it for this time, will add next time
- ¼ cup 35g pumpkin seeds
- 3 tablespoon 25g sunflower seeds
- I simply added approx 1/2 cup of mixed seeds - including flaxseeds, pumpkin seeds and sunflower seeds
- ½ cup chopped dried cranberries or chopped dried apricots - I added 1/4 cup cranberries roughly chopped with knife
- ⅔ cup 113g dark chocolate chips - skipped
The recipe recommends resting the dough for 30 minutes in fridge before scooping into the baking tray. I made both with and without resting, and it was equally good.
Bake for 10-12 minutes at 175 C
