Whole-wheat/low gluten cakes

Will log cakes using buckwheat flour here.

Whole-wheat chocolate muffins

This is a whole-wheat recipe that I usually use to make muffins. Comes out very nice! You can not make out that it is whole-wheat and not all-purpose flour.

Ingredients:

  • 2 large Eggs
  • ½ cup Yogurt
  • ½ cup Melted Butter
  • ½ cup Milk 
  • 1 tbsp Vanilla Extract
  • 1¾ cup Wheat flour
  • 1 cup Granulated Sugar - slightly less also works
  • ½ cup Unsweetened Cocoa powder 
  • 1 ½ teaspoons Baking powder
  • 1 teaspoon Baking Soda
  • ¼ tsp Salt - I usually dont add it since I use salted butter
  • 1 cup Dark Chocolate dark (chopped)
Note: it is important that you mix the dry ingredients and wet ingredients separately, and mix the two just before transferring the batter to muffin pan. This is because the recipe uses baking soda which causes instant reaction on mixing with yogurt. You dont want to lose the airiness of the batter. Recipes which use only baking powder are not so finicky since baking powder reacts only on heating. But I generally prefer to use baking soda, more comments to be added.

Jowar muffins

Dry:

  • 1/2 cup Jowar Flour (60g)
  • 1/2 cup Whole Wheat Flour (60g)
  • 1.5 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 cup Desiccated Coconut (90g)
Wet:
  • 1/2 cup Softened Butter (100g)
  • 1/2 cup Dahi (120g)
  • 1/2 cup jaggery powder (100g)
  • vanilla
  • 1/2 cup Milk
Topping (optional):
  • Almonds/cranberries/...

Mix dry and wet ingredients separately. Fold together, transfer to muffin liners and bake at 180C for 20-25 minutes.
