Methi Paneer

It is quite straight-forward. The main point of difference from the more famous Paalak Paneer is that Paalak paneer usually has boiled and pureed paalak. For methi, it is better to just saute it for 2-3 minutes. Of course, it also means that it will need to be chopped finely to achieve that.

Moong Daal Paalak Cheela

Ingredients:

  • 1.5 cups moong daal
  • 2 tbsp oats
  • 200 g spinach
  • .5 cup coriander leaves
  • chilli powder, cumin, salt
  • ginger-garlic paste
  • onion, green chillies

Blanch spinach. Blend everything together. Add onion, coriander after blending. Make cheela's!


Amaranth Moong Daal

  • 1 bunch amaranth leaves
  • 1 cup split lentils
  • 4-6 garlic cloves
  • 1 onion
  • 1 large tomato
  • turmeric, cumin powder, cumin seeds
  • 3tbsp veg oil
  • coriander
  • salt, chilli flakes or red pepper for garnish

Chop the amaranth leaves, place them in a pan together with lentils and turmeric.

Add water to cover by about 2 cm

Cook until the lentils are ready - about 10min after it starts to boil

In the meantime in another pan heat the oil and add the cumin seeds ,garlic and onion and saute until golden then add the chopped tomato and the rest of spices and cook until the tomato is pulpy.

Add the Dal and simmer for a couple of minutes until all combined.

I have come a long way since 2022 when I started cooking seriously, and now use Bathua, Methi, Paalak and Dhaniya very frequently. And other saag's too if I can get them. Also make sarson kaa saag at least once every winter.

I add whichever greens are available to dosa/cheela batter, to soups, and to bhaji. Also, paalak paneer is almost a weekly dish. But the surprise new dish that I learnt this winter is Methi Paneer Bhurji. Detailed info on this one here:
