I changed the title of this page today from Baked Red/Brown Rice to Lunch recipes with Red/Brown Rice. This is because I wanted to add more recipes - some of which I have been making pretty frequently nowadays.
Brown Rice Tehri
- It is difficult to give an ingredient list for this, as I basically go with whatever is there in my fridge that day. But I am making this pretty frequently nowadays for lunch - feels healthy and filling. I make it in my new Vinod Steel Pressure Cooker so this is a one-pot meal, and doesn't require any other cooking pans. Just a chopping board, and a bowl to pre-soak the rice in. Also, most elements below are optional, maybe except ghee and rice (and salt and water!).
Rough steps:
- Take 1 cup rice - wash 2-3 times, and soak for 1 hour if possible. If rice has not been pre-soaked, that is also ok. Just soak it at the start of preparation of the dish.
- In a pressure cooker, add 1 tbsp of ghee. Add some whole spices like cumin, black cardamom and cinnamon.
- Add chopped onions and sauté.
- Add chopped vegetables like potatoes, carrots, peas, beetroot, mushrooms, bell peppers and sauté a bit more.
- Add crushed garlic and ginger.
- Add ground coriander, turmeric, garam masala, red chillies.
- Add 1/2 to 1 cup of dahi, and mix well so that no lumps remain.
- Add 2 cups water and salt, and let it boil.
- Cover it and let it pressure cook for 12 minutes.
Baked recipes
Starting point for the following recipes is 1 cup of red/brown rice boiled in a pan with plenty of water for 20-30 minutes.
Recipe #1
Bottom layer: grated potato mixed with butter and salt
Middle layer: red rice boiled for 20-30 minutes, mixed with grated beetroot and sweet chilly sauce
Top layer: sautéed mushrooms with salt and pepper
Bake at 230C for 20 minutes
Recipe #2
- Brown rice
- Red pepper cooked in a pan in sweet chilly
- Cabbage cooked in soya sauce
Bake for 15 minutes. Serve with a side of hash browns baked for 20 minutes.
