Waffles
I have tried many waffle recipes over the years, but this is my current favorite. Makes light waffles which are good to eat by kids and adults alike.

Ingredients:
- 1 cup (130 grams) all-purpose flour (am going to try whole wheat too)
- 1 1/2 teaspoons (5 grams) baking powder
- 1/4 teaspoon salt
- 2 tablespoons (25 grams) granulated white sugar
- 1 large egg, lightly beaten
- 1 cup (240 ml) milk, at room temperature
- 2 tablespoons (28 grams) unsalted butter, melted and cooled to room temperature
Pancakes/bonus recipe of Choco Bombs
Something I tried recently from Bake with Shivesh's repertoire - these are made in a Paniyaram pan, so I feel better about putting good money and kitchen space into a cast iron pan which I haven't used much so far.
Even better - the same recipe (sans Nutella) makes perfect American-style pancakes - go awesomely with Maple syrup/liquid jaggery/chocolate sauce.
Ingredients:
- 1 cup+2 tbsp warm milk
- 1/2 tbsp vinegar
- 1 cup whole wheat flour
- 2 tbsp sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp vanilla
- 2 tbsp oil
- Nutella
I went all fancy and put the batter into a piping bag, but it probably wasn't needed.

Hot Oats Porridge
- 1 cup oats (for 1 person)
- 1-1.5 cups milk
- saffron - 5-6 strands
- 1 tsp elaichi powder
- 3 tbsp jaggery (or any other sweetener)
- almonds and brazil nuts powder
- chocolate chips/chopped chocolate
- pomegranate seeds
- chopped apple/banana/fruit of your choice
- cashewnuts and raisins
Oats-chia-cocoa overnight pudding
Ingredients:- 1 tbsp Chia seeds
- 1/3 cup oats
- 2/3 cup milk
- 1-2 tsp cocoa
- 1-2 tbsp maple syrup
- 1 tbsp home-made protein powder (optional)
Mix and soak overnight, and add green raisins, soaked almonds and cashews before serving.

Dutch baby/Dutch pancakes

Came across this one yesterday, and made for today's breakfast. It feels like a cross between a pancake and a cobbler. A hit with Agni for sure. Made an amaranth flour version for gluten-free folks like me. Loved it!
- 4 tbsp butter - divided - 2 tbsp goes into batter, and the rest into pre-cooking the fruits
- 1/2 cup (125 g) whole milk
- 1/2 cup (64 grams) whole wheat flour (also tried with amaranth flour, it wasn't bad at all, cannot be compared with wheat but was pretty good and worth making again)
- 2 large eggs (the original recipe called for 4 but I reduced that since some reviews said it was too eggy)
- 3 tablespoons (43 g) granulated sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- zest of one lemon
- 1 cup (154 g) blueberries - I used cherries and peaches, will also try dried cranberries next time.

Bircher's Muesli
- Oats 1/3 cup
- Almond or regular milk
- Chia seeds 1tbsp
- Peanut butter 1 tbsp

Fruit and Nut Bowl
- 200 gm
- 2 tsp overnight soaked chia seeds
- 1 tbsp date syrup
- Chopped fruits, e.g. grapes, strawberries, apples, pomegranates, mangoes
- Nuts : 2 almonds chopped, 5-6 pumpkin seeds, 2 chopped pistachios & 2 cashew halves

Fudgy oatmeal

- 35g Oats
- 7g Chia seeds
- 1 tbsp unsweetened cocoa powder
- Cinnamon powder 1/4 tsp (optional)
- 1/4 tsp sugar (sweetener)
- Pinch of salt
- 1 scoop protein powder (optional)
Blend well and add half a glass of hot milk little by little. Mixture should be fudgy like a cake batter and not milky. It will automatically cook due to the boiling hot milk.
Top with fresh strawberries, a tbsp of greek yogurt (sweeteneed with honey) and 1 tsp peanut butter.
