This is one of the earliest non-cake baking I ever did.
The recipe was adapted from the Apple Crispy recipe on Chocolate Gourmand - Thanks for making my cooking multi-dimensional! (http://www.chocolategourmand.com/recipes/pies_tarts_crisps/apple_crisp.cfm)
Filling
- 5 pounds Granny Smith apples (about 6)
- zest of 1/2 orange
- zest of 2 Meyer lemons
- 2 tablespoons orange juice
- 2 tablespoons lemon juice
- 1/2 cup sugar
- 2 teaspoon cinnamon
- 1 teaspoon ground nutmeg
Topping
- 1 1/2 cups whole-wheat flour
- 3/4 cup sugar/jaggery
- 3/4 cup dark brown sugar
- 1/2 teaspoon salt
- 1 cup oatmeal (quick cook works just fine)
- 1/2 cup chilled unsalted butter, cubed - soft is also ok
Bake for approximately 1 hour at 190-200 C, or until the topping has browned. Serve warm.

Update: I recently updated this recipe substantially, and guess what - the crumble was even yummier than ever! Noting down the updated ingredient list.
Filling
- Any left-over fruits in fridge - I used apples, apricots, pears and peaches
- 1-2 tbsp bitter orange marmalade (I usually have some in fridge, so I used that instead of zest)
- 2 tablespoons lemon juice
- 1/2 cup brown sugar
- 2 teaspoon cinnamon
- 1 teaspoon ground nutmeg
Topping
- 1 cup whole-wheat flour - plan to take it out completely to try a gluten-free version
- 1.5 cup oatmeal (just pulse the steel-cut oats once/twice in grinder)
- 1 cup mixed nuts - pulsed lightly in grinder - I used walnuts, pistachios, almonds and 2 brazil nuts.
- 1.5 cup jaggery
- 1/2 cup chilled butter, cubed
Nuts add a lot to the taste and also make it richer and healthier.
Note: Jaggery causes crumble to get brown very fast. But apples are not cooked so fast. So, for faster baking, pre-cooking apples in a little water will help.
Update:
Tried this today and it was amazing!
Topping:
- 2 cups flattened oats - slightly crushed in grinder
- 100 g butter
- 1 cup nuts - almonds, pista, brazil nuts - crushed in grinder
- 1 cup jaggery - can be reduced to 3/4 cup
- 6 apples peeled and chopped, and cooked in a pan with 3-4 tbsp water and 2 tbsp sugar for 10-15 minutes
- powdered cinnamon, nutmeg
- 2-3 tbsp marmalade
- lots of lemon juice (~2tbsp)
Bonus Recipe: Strawberry crumble
(adapted from some long-forgotten location, apologies to the original creator!)
Note: I have made this recipe successfully in past, but now I just stick to the first one. One of the reasons being this recipe using baking powder which I feel doesn't need to be used for crumble.
- 3/4 cup / 65g rolled oats / oatmeal (quick cooking is ok)
- 3/4 cup / 115g white flour , whole wheat/all purpose
- 3/4 cup / 130 g brown sugar (loosely packed)
- 1/2 tsp baking powder
- 3/4 tsp cinnamon powder
- Pinch of salt
- 6 tbsp / 90g unsalted butter , melted
- 1 kg / 2 lb strawberries , ripe (less is also ok - i have made this recipe with 200g strawberries too)
- 2 1/2 tbsp cornflour / cornstarch (absolutely optional)
- 1/3 - 1/2 cup / 70 - 110g white sugar (Not really required)
- 2 tbsp water (Not really required)
- 1 tsp vanilla extract (Not really required)
