Yes! we are talking about the humble potato today :)
I have made tons of potato dishes over the years, and some of them have become a staple for us at home. So, I am going to list most of them here, some with recipes, others without.
Aloo chorchori
I learnt this from my Ma-in-law after I got married, and this is something that I still make almost every week. Goes best with a light daal like Moong/Masoor/Arhar. I also learnt dom-aloo from her, which recipe I posted mabe 15 years back on allrecipes.com !!!! But that's something I make far less often. Maybe time to fix that.
New version: I have tried making aloo chorchori potatoes in air fryer - come out pretty good.
Aloo Bhujia
Learnt it from my Bihari bestie, and it's so good. Main points - Don't peel the potatoes, Slice them, cook in mustard oil with some jeera and rai, and sabut red chilli. Top with pepper and ground red chilli at the end. Pretty similar to chorchori, except for style of chopping potatoes.
Hasselback Potatoes
This was a dish that I discovered during the Covid lockdown, and havent stopped making since then. A definite fam-favorite.
Italian style - baked potatoes with tomatoes and cheese
Used the recipe of melanzane di parmigiana - just replaced eggplants with potatoes. Everybody loves it. I also use it with lasagne, to make it a complete meal.
Potatoes in Chinese sauces
This is a quick-fix recipe, which is loved by everyone in the fam!
- Chowmein sauce - I use this from Masterchow, but if not available a mix of soya, chilli and tomato sauce should work too.
- Sweet chilli sauce - I like how the sugar adds caramelization to the dish
- Peanut sauce - optional, I like to use it as it adds a layer of richness and nuttiness
- Boiled potatoes, chopped in not-too-thin, not-too-big, Goldilocks-friendly pieces
