Lots of times, I have a pantry ingredient at hand which I want to use. Maybe the ingredient is nearing its best-before date, or maybe I just want to try it out! Sometimes I order an ingredient after watching some recipe video, and by the time the delivery arrives, I have forgotten about the recipe, and now don't know what to do!
In this Idea series, I am going by ingredients, instead of dishes - and will list some recipes which I can use for the ingredient. Hope this is useful!

Moringa Soup
- 1 tbsp uncooked moong dal
- 3–4 drumsticks, cut into long pieces
- Salt, ground pepper + chilli powder + chaat masala
- Juice of 1 lemon (or to taste)
- Handful fresh coriander, 1 green chilli, Few sprigs of pudina (mint)
Cut drumsticks into 4-5 inch pieces. Boil them with moong dal for 3 whistles.
Once cooled, carefully remove the drumstick pulp (avoid hard fibre). Wash the drumstick skins to extract all residual pulp.
In a blender, grind fresh coriander, green chilli, and pudina into a fine paste. Add the drumstick pulp, cooked dal, salt, and the saved stock water. Blend into a smooth paste.
Transfer this mixture to a pan, add water, and bring to a boil.
Finish with lemon juice, pepper, and the spice mix. Stir well.
Serve hot, topped with corn, sprouts, or crunchy soya sticks. Drizzle extra lemon and sprinkle more spice mix if you like.
