Broccoli Paneer rice
Very offbeat idea - uses a sauce of roasted broccoli and paneer which is poured over sauted peppers. Served with rice.
I tried it out, came out pretty good.

Thin crust Pizza with unleavened base
Ever since I have tried this out, it has become quite a family favorite. And a very easy recipe too! Earlier I used to spend 3 hours preparing the yeast-based pizza base. And that used to become quite thick while baking due to the yeast-effect. I anyways prefer a thinner crust, and this recipe is quite a life saver, without any massive preparation needed.

First make regular roti dough, and make a parantha on tawa in the regular way. Minor twist - stuff a cheese slice in the parantha. I have tried it with and without the cheese and it works well both ways.
Once the parantha is ready, I top it with:
- lots of tomato sauce - i use whatever is handy, have tried with pasta sauce, or even ketchup mixed with oregano
- lots of mozeralla
- toppings
My favorite toppings are:
- Mushrooms, peppers, onions - these can be slightly pre-roasted in a pan or directly on fire for the smoky effect.
- Paneer - chopped into small-ish cubes and coated with salt and piri-piri seasoning.
- Fresh Tomato slices
- Olives if available, green chillies if someone wants extra spicy
