Generic Salad recipe
- Boiled Beans/Sprouts (this is needed if the salad is a complete meal in itself.)
- Raw veggies/fruits - cucumber, onion, tomato. olives, carrot, avocado, watermelon, pomegranate, grapes, apples
- Leaves - mint, coriander, kale, lettuce
- Toasted nuts/seeds - sunflower, melon, walnuts, almonds, cranberries, raisins
- Dressing - Lemon, EVOO, vinegar, honey, sour cream, yoghurt, sugar
- Toppings - crumbled paneer/feta, poppy seeds, til
- Salt, pepper
Use some or all of these and toss!
1. Greek Salad - a little fancier version of onion-tomato-cucumber salad
- 1 medium tomato, sliced
- 1 cup halved cherry tomatoes
- ½ cup finely sliced onions
- 1 cup thick slices of cucumber
- chopped dill leaves, chopped mint leaves
- sliced black olives
- 200 g feta cheese
- 1 tbsp lemon juice
- Salt, pepper, oregano
2. Broccoli Paneer Salad
- 1 ½ cups broccoli florets - boiled/steamed for 2-3 minutes
- ½ cup paneer cubes - sautéed in EVOO for 2-3 minutes
- 1 carrot, sliced
- 2 tablespoons lemon juice, salt, pepper
3. Kale Salad with chickpeas
- 2 cups of chopped kale - will this work with mint?
- 1 ½ cups cooked chickpeas
- ½ cup thinly sliced black olives
- ⅓ cup sun-dried tomatoes
- 3 tbsp sunflower seeds - toasted
- 2 tbsp extra virgin olive oil
- Sea salt to taste
- ½ cup grated parmesan cheese
- ½ teaspoon black pepper
- ½ teaspoon Dijon mustard
- 1 teaspoon minced garlic
- 3 tablespoons lemon juice
- ¼ cup tahini
4. Thai Cucumber Salad
- 1 cup 2 inches long cucumber slices
- ½ cup bean sprouts
- ½ cup iceberg lettuce
- 2 tbsp peanuts - for topping
- 3 tbsp lime juice
- ½ tsp brown sugar
- 1 tsp olive oil
- ½ tsp seeded and chopped jalapenos
- 7-8 slices of pickled olives
- Salt to taste
5. Carrot Ribbon Salad
- 2 carrots - peeled into thin ribbons
- ¼ cup thinly sliced shallots
- 1 tbsp lemon zest
- ¾ cup raw pistachios - toasted, for topping
- 4 tbsp EVOO, 6 tbsp lemon juice, 2 tbsp honey
- ¼ cup each chopped lettuce, parsley
- ½ cup halved grapes
- Salt, pepper
6. Apple Pomegranate Salad With Spicy Honey Dressing
- 2 cups romaine lettuce
- 1 cup mixed greens
- 1 cup sliced apple
- ½ cup crumbled feta
- 1 tbsp minced garlic
- 2 tbsp honey, 2 tbsp EVOO, 3 tbsp lime juice
- salt, pepper
7. Kale And Quinoa Salad
- ⅔ cup quinoa
- 2 cups chopped kale
- ½ cup avocado slices
- ½ cup bell pepper slices
- ¼ cup red onion slices
- 1 tbsp crumbled feta - for topping
- 3 tbsp olive oil
- 2 tablespoons lemon juice
- 1 tbsp each Dijon mustard, red wine vinegar
- ½ teaspoon chili oil
- Salt
Quinoa and Chickpea Salad
- 1 cup cooked quinoa
- ½ cup cooked chickpeas
- ½ cup cooked red lentils
- ¼ cup paneer (cubed)
- ½ cup yellow bell pepper (chopped)
- ½ cup cucumber (diced)
- ½ cup cherry tomatoes (halved)
- ½ cup kale (chopped)
- ¼ cup purple cabbage (chopped)
- 2/3 walnuts (crushed)
- 1 tsp sesame seeds
- 1 tsp olive oil
- 1 tsp lemon juice or maple syrup
Caeser salad dressing
- ¼ cup unflavored Greek yogurt
- 2 cloves of minced garlic
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice
- 2 tbsp olive oil
- ½ tsp Worcestershire sauce
- Salt and pepper
Ranch dressing
- 4 tbsp EVOO
- ½ cup tarragon vinegar
- 1 tsp brown sugar
- 1 tsp minced garlic
- ½ teaspoon dry mustard
- 2 tbsp grated Romano cheese
- pepper, salt
