Carrot-onion pickle-ish salad

  • 1 cup shredded carrot 
  • 1/2 cup sliced onions 
  • 3-5 slit green chilli 
  • Salt and lemon juice to taste 

For tadka: 

  • 1 tbsp mustard oil 
  • 1/2 tsp panch phoron
  • 1/2 tsp fennel seeds 
  • 1 pinch turmeric powder 
  • 1/2 tsp chilli powder
  • 1/2 tsp coriander powder
  • 1 tsp chopped garlic 
  • Chopped coriander leaves for garnish

1. Mix together carrot, onion and chilli with salt and lemon juice. Recommend doing this by hand. And then leave it for 5-10 mins. 

2. Make the tadka in hot mustard oil and pour it into the veg. 

3. Add in chopped coriander leaves, mix well and serve immediately.


Instant Onion Pickle

  • 3 onions - chopped 
  • sliced green chillies
  • 2 tsp saunf powder (preferable roughly ground in mortar)
  • salt, jeera powder, red chilli powder
Tadka:
  • 1 tbsp mustard oil
  • 1/2 tsp methi daanaa
  • 1/2 tsp kalonji
  • 1/2 tsp hing
Mix the first set of ingredients. Make tadka and pour over onion mix.


Amla pickle

  • 250 g amla
  • 1/3 cup mustard oil
  • ajwain, dhaniya, salt and hing
  • saunf, methi
Chop amla and let it dry for a day
Put in a jar, fill with oil, ajwain, dhaniya, salt and hing
Dry roast some saunf and methi, crush and add.
Let sun-dry for 2-3 days.

Pro tip:
When sun drying, cover with cloth first and then close the lid. That absorbs the moisture that comes out.


2-hour pickle for onions/cucumber/carrots/...

 Ingredients: red onions, vinegar, water, peppercorns, mustard seeds, sugar, salt

let sit overnight for the best flavor and vibrant color
