Salads and dressings

 This is my weak zone. I don't eat a lot of salads. Have tried to fix it recently by making an avocado and cucumber salad almost every evening. Plan to add more options, especially to lunch as well. 

Core structure:

  • Veggies - cucumber, carrots, kachri, tomatoes
  • Fruits - Pomegranates, apples, watermelon
  • Simple Dressing
  • Topping of some nuts/dried fruits

Avocado and cucumber

  • Avocado - chop finely using manual chopper or mash with fork
  • Cucumber - chop finely using manual chopper or knife
Mix, squeeze a lemon, add some rock salt, and you are good to go!


Greek Yoghurt Salad dressing

  • Greek yoghurt
  • lemon juice
  • honey
  • acv
  • Olive oil
  • salt/pepper
  • carrots, cucumber, bell pepper, onion, cabbage

Roasted Red Pepper Salad dressing

    • 1 red bell pepper
    • 1/3 cup water
    • 2 tablespoons olive oil
    • 4-5 garlic cloves
    • 1/2 tablespoon ground black pepper
    • 1/2 tablespoon salt
    • 1/2 tomato
    • 5-6 cashews - soaked for 3-4 hours
    • 1 tbsp Lime juice/Apple Cider Vineger
    • 1 dried red chilli
    Some versions also add paneer/hung curd for extra creaminess and protein.
