Paneer Flagels


  • 1 cup cottage cheese
  • 1 cup + 2 tbs flour - almond flour also works
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tbs olive oil
  • 2 oz baby spinach, micro chopped
  • 1/2 cup shredded mozzarella cheese
Preheat oven to 375℉. 
Line a large rimmed baking sheet with parchment paper.
In a mini food processor, add in your cottage cheese and pulse until smooth.
To a large bowl, add the cottage cheese, flour, baking powder, salt, olive oil, spinach, mozzarella and mix together until combined. 
Use your hands to form the dough into a thick log (6 inches long). 
Divide the dough into 6 equal pieces. 
Shape the pieces into flatter circles and poke a hole in the middle with your finger. Place onto pan and brush them with egg wash. 
Bake for 22-25 minutes or until golden brown on top. Transfer to wire rack to let cool completely.

Masoor daal bread

1 cup dhuli masoor - wash, soak overnight, drain water

add 3 eggs

50ml olive oil

Blend

Add 

100 ml dahi

10g baking powder

salt

black cumin 1tsp

chilli flakes 1 tsp

cheese 1 cup

parsley

mix and pour into muffin moulds

top with seeds

180 degrees 40-45 minutes

Peri-peri Paneer Bowl

Best time to make - when you have left-over rice!
  • Paneer cuboids
  • Peri Peri Masala - @keyafoods
Coat paneer in peri-peri masala and toast a little in a little oil on low heat.
  • Mixed Herbs
  • Chilli flakes 
  • Cooked Rice 
  • Butter 
Toast rice with herbs and butter in a pan, add some fresh herbs too like coriander or parsley.
  • Mushroom
  • Bell pepper 
  • Broccoli 
Sauté the veggies in some butter, keep separately until sauce is ready.
  • Garlic
  • 2 tbsp Atta 
  • Half litre Milk
  • Cheese
Make white sauce - add more seasoning and pre-cooked veggies to it. Serve with rice and paneer.
