I have made smoothies with Ragi, pancakes, cheela's, and dosa too! It is a really versatile ingredient. Also, makes amazing crackers to go with anything!
Ragi dosa and Ragi Moong Dosa
Ragi sweet pancakes
- Pinch of salt
- 1/2 tsp nutmeg
- 1 tsp ground flaxseeds
- 1 tsp vinegar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 1 tbsp EVOO
- 1 cup Ragi flour
- 1/2 tsp baking soda
- 1 cup milk
The recipe works similar to whole wheat pancakes, and makes really light, fluffy pancakes.
Ragi savoury pancakes/crepes/cheela
- 1 cup ragi flour
- 1 tbsp besan
- 1 tsp sasame seeds
- 1/2 cup chopped onion
- 1 chilli - finely chopped
- grated ginger
- 1/2 cup chopped coriander
- salt

Today, I made a very quick very simple version -
Ragi flour, besan, ajwain, bhuna jeera, lal mirch, salt. Mix well with water.
These were some of the simplest to spread crepes-like pancakes. Needed next to no oil to cook.
Had these with some leftover Sindhi Kadhi and leftover Rajma patties. Really very good!
Ragi Baati (made in Paniyaram pan) with Methi Kadhi
- 1 cup ragi flour (original recipe had bajra)
- 1/4 cup besan (original recipe had whole wheat flour)
- Salt, red chilli powder, Ajwain 2 tsp, roasted cumin powder 1 tsp
- chopped green onion 1
- Desi ghee 2 tbsp
- Water enough to knead the dough
- Buttermilk/Dahi-water mix to get 3-4 cups
- Besan/gram flour 2 tbsp
- Turmeric powder, red chilli powder, salt to taste
Tadka -
- Desi ghee, heeng, curry leaves, dried red chilli, methi seeds, mustard seeds, chopped garlic cloves
- Add 1 medium chopped onion
- 1cup finely chopped methi/ fenugreek leaves

Made it yesterday, and it's all things healthy and good.
Simple to make too.
Chop ginger, garlic, green chilly, onion, vegetables like carrot, peas, corn, beans.
Saute in ghee and add 3-4 cups of water. Can add 1 cinnamon stick too. And salt.
Mix .5 cup ragi in 1 cup water and add to soup mix once veggies are cooked.
Cook for 3 more minutes.
Add lemon juice, chopped green onions, coriander. Done!
