Fun breakfasts - the savoury version

This includes all kinds of Cheelas, savoury Crepes, Dhokla and Waffles. There were too many dosa recipes, so I moved them a separate page:

Moong-methi Cheela/Waffles with tomato chutney

Have made the cheela many times with a tomato chutney. Now planning to try their waffle-version as well. Recently bought a cast-iron waffle maker for this, hopefully Agni likes these, since she is not too fond of cheela.

  • 1 cup Moong Dal - soaked overnight
  • Salt, haldi, crushed ginger, heeng, green chillies, bhuna jeera
  • oil to brush on waffle maker

Use blender to mix everything together and make smooth batter.

Optional additions:
  • Vegetables like ghiya, potato
  • onion
  • corn
  • bell peppers
  • green leaves ke hara dhaniya, methi leaves, spinach
This link has a good suggestion of adding vegetables as a layer in waffle maker instead of pre-mixing to the batter.

Besan/Sattu cheela

Replace moong daal with besan/sattu to get a faster to prepare version.


Omelettes

The evergreen breakfast dish! Add spinach, microgreens, chillies, cheese, pizza seasoning, parsley, mushroom, onions... only imagination is the limit!

Cook grated potatoes like a hashbrown, and pour egg on top to get a Spanish (and my kid-friendly) version!

Bajra-spinach cheela

  • Bajra/some other millet flour
  • curd
  • crushed ginger/chilli
  • onion/spinach/capsicum/carrots/tomatoes/coriander
  • sesame seeds - sprinkle on top of cheela on the tawa

Made it with 2/3 cup Bajra, 2/3 cup besan and pureed bathua-tomatoes-ginger-chillies. added dahi, ajwain, roasted jeera, salt, some water.
Came out very good.

Made recently with Ragi instead of rice flour and mixed with chopped onions, grated carrot and radish, and moringa powder. Very good!

Sprouted Ragi Dosa

  • 1 cup ragi sprouts
  • 1/4 cup rice flour
  • 1/2 cup dahi
  • salt, cumin, ginger, green chillies
Mix all ingredients into a smooth batter & let it sit for 10 mins.
Cook and top with Til and Kalonji.


Coconut cucumber Chia pudding

  • 200 gm fat free Greek yogurt
  • 1/3 cup chia seeds - soaked in 1/4 cup water for 2-3 hours
  • 50 gm grated cucumber & cucumber juice 
  • 20 gm dry coconut 
  • Kala Namak, cumin powder, chaat masala, black pepper powder
  • Crushed peanuts for topping

Instant dosa - oats and red lentils (masoor)

  •  1 cup oats
  • 3/4 cup masoor dal (soaked for 30 mins)
  • 1/4 cup moong dal (soaked for 30 mins)
  • 1 small beetroot, peeled and chopped
  • 1-inch ginger
  • 2 green chillies
  • cumin seeds, Salt, water

Blend all ingredients with water into a smooth batter. Make dosa as usual.
