Quinoa Pulao

This has become my staple lunch recipe - it is very simple and quick, just replace rice with quinoa. Make sure to soak quinoa 6 hours in advance. This comes out so good, even better than rice in texture.
Rough recipe:
- 1 tbsp oil
- 1 chopped onion
- veggie mix - tomatoes, ginger, garlic, chillies, peas, potato, anything and everything!
- salt, chilli powder, turmeric
- 1 cup quinoa - cook with 2.5 cups water. 15 minutes cooking in pressure cooker after 1st boil.
Today I added 2 tbsp schezwan chutney to pressure cooker. Yum!
High Protein Chickpea Quinoa salad
- Boiled chickpeas
- 1 cup quinoa, soaked for 2+ hours and boiled for 15 minutes in 2 cups of water
- 4-5 small tomatoes
- lemon juice
- 1 English cucumber
- 1 red onion
- 1/2 cup hemp seeds
- 1 cup chopped coriander
- EVOO
- garlic powder, paprika
An optional step which I want to try out is to roast the chickpeas. Mix with spices and oil, and place in oven at high heat. I might try out with air fryer. Roast for 15+ minutes.

Add:
- crushed paneer
- raisins (not if you are Agni!) :)
- lots of pomegranate
