Idea Series - Recipes with Raw Mango

Lots of times, I have a pantry ingredient at hand which I want to use. Maybe the ingredient is nearing its best-before date, or maybe I just want to try it out! Sometimes I order an ingredient after watching some recipe video, and by the time the delivery arrives, I have forgotten about the recipe, and now don't know what to do!

In this Idea series, I am going by ingredients, instead of dishes - and will list some recipes which I can use for the ingredient. Hope this is useful!

Raw mango (ambi) is a favorite ingredient of mine - I love it always. So I end up ordering it frequently, and then keep wondering what to make with it. So, here are some recipes:

Bengali Tok daal

A perennial favorite. Will add detailed recipe.

Sambar

Detailed recipe on sambar/curries page. Raw mango works beautifully as a replacement for tamarind.

Mirchi chutney

Fry some green chillies and let them cool down. Blend with raw mango and sugar. Also, can add kalonji during chaunk.

Himachali Raw Mango Mahani - A cold summer soup

Ingredients:
  • 2 medium size raw mango
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 1 green chilli, salt
  • 1/2 tsp black pepper, 2 tbsp powdered sugar, 1/2 tsp salt (again)!
Boil mangoes for 15-20 minutes. Or pressure cook for 2 whistles.
When cooled, remove and mash the pulp using hands.

Make a paste of mint, coriander, chilli and salt using mortar or blender.
Add to pulp along with pepper, sugar and salt.
Add 400 ml chilled water. Mix well. Add 1/2 onion finely chopped.

Note: You can store this for upto two weeks and just add chilled water and finely chopped onion while serving. Enjoy this chilled.
