Well, that's life now, isn't it? In view of my consistently high inflammation, Doc has recommended 100% gluten-free and dairy-free diet. And I was vegetarian to begin with. So, not a bucket-full of options left for me, at a time when I was looking forward to plenty of cooking and baking.
But instead of cribbing about it, I am trying to see the silver lining - this is literally the year of Millets - and this gives me an opportunity to delve deeper into them, and explore them to the most.
So far, I have been sticking to moong daal chila/besan chila/omelettes for breakfast. But am keen to try other recipes, especially using millets.
So, here goes a recipe which I am planning to try soon:
Savory millet pancakes
1 cup Millet Flour
1/2 cup Rice Flour
Vegetables - optional - grated carrot, chopped spinach, grated beetroots, lauki?
1 Onion, Finely Chopped
2 Green Chilies, Finely Chopped
1 inch Ginger, Grated
1/2 tsp Cumin Seeds
1/2 tsp Turmeric Powder
Salt To Taste
Water As Needed
Oil For Cooking
