Planning to list the recipes here which I have used over the years to bake some post-dinner desserts.
Coconut Macaroons
- 400 g (1 can) condensed milk
- 5.5 cups flaked coconut
- 2 tsp vanilla
- 1.5 tsp almond
- 2 eggs, whites only
- 80g caster sugar
- 200g desiccated coconut
- 1tsp vanilla paste
- 90g dark chocolate
Whip eggs and sugar until frothy.
Add coconut, a pinch of salt and vanilla.
Rest for 10 minutes.
Bake at 170 for 10-12 minutes.
Melt the chocolate and dip bottom of each macaroon in melted choc. Put in fridge for 20 minutes to set.
Cobbler
I have tried multiple recipes - the following is my favorite:
I have adapted it slightly from Easy Peach Cobbler (With Whole Wheat Flour Batter) (vegrecipesofindia.com)
6-7 peaches - peeled and chopped
Can also add any other fruits. I have tried everything under the sun like plums, mangoes, pomegranates, apples.
¼ to ½ cup sugar - add according to sweetness in the peaches
50 to 60 grams regular salted butter
1 cup wholemeal flour/atta
2 tsp baking powder
½ teaspoon vanilla extract
¼ teaspoon cinnamon powder
2 pinches nutmeg powder - I just grate some nutmeg into the batter
1/4-1/3 cup sugar (reduced from the original recipe)
1 cup milk - 250 ml
Add melted butter to a casserole dish. Pour batter on top of it. Spread fruits as the top-most layer.
Bake at 190 degrees Celsius for approx 40 minuts.
