The ubiquitous Banana Bread!!

Yesterday, I used a new recipe to make banana bread-chocolate muffins, and boy, were they good! Packed for school lunch today. Also, had it with tea without even warming them, and they were perfectly soft and moist. A ton of thanks to https://sallysbakingaddiction.com/whole-wheat-double-chocolate-banana-muffins/

Major new addition was cocoa powder in addition to chocolate chips. Putting down the list of ingredients here:

  • 1 and 1/2 cups mashed bananas (about 4 medium or 3 large ripe bananas)
  • 1/3 cup honey (or maple syrup) - I used 1/3 cup jaggery powder. I was worried about reduction of liquid ingredients, but the muffins turned out perfect, not dry at all.
  • 1 large egg, at room temperature
  • 1/4 cup coconut oil, melted (or vegetable oil, olive oil, or melted butter) - i used EVOO this time
  • 1 teaspoon pure vanilla extract
  • 1 cup whole wheat flour (spooned & leveled)
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (180g) semi-sweet or dark chocolate chips (save a few for topping) - I used chopped couverture chocolate instead of chips.

Since I am on primarily gluten-free diet now, am going to try this next. Started with this yesterday, but then realized that I dont have enough buckwheat flour :)
