Yesterday, I used a new recipe to make banana bread-chocolate muffins, and boy, were they good! Packed for school lunch today. Major new addition was cocoa powder in addition to chocolate chips. Putting down the list of ingredients here:
- 1 and 1/2 cups mashed bananas (about 4 medium or 3 large ripe bananas)
- 1/3 cup honey (or maple syrup) - I used 1/3 cup jaggery powder. I was worried about reduction of liquid ingredients, but the muffins turned out perfect, not dry at all.
- 1 large egg, at room temperature
- 1/4 cup coconut oil, melted (or vegetable oil, olive oil, or melted butter) - i used EVOO this time
- 1 teaspoon pure vanilla extract
- 1 cup whole wheat flour (spooned & leveled)
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (180g) semi-sweet or dark chocolate chips (save a few for topping) - I used chopped couverture chocolate instead of chips.
