Flaxseed laddoos

Ingredients:
  • 1 cup flax seeds 
  • 1½ cups chopped jaggery 
  • ½ cup raw peanuts
  • ½ cup almonds 
  • ½ cup grated dried coconut
  • ½ cup oats  
  • ¼ cup white sesame seeds
  • 2 tbsps black sesame seeds 
  • 2 tbsps garden cress (aliv) seeds
  • 1 tsp green cardamom powder 
  • 1 tsp nutmeg powder
  • Ghee for greasing

In a pan, add jaggery and ¼ cup water, cook till jaggery reaches 1 string consistency. 
Dry roast the following on medium heat:
  • flax seeds for 1-2 minutes 
  • raw peanuts for 2-3 minutes
  • almonds for 2-3 minutes  
  • dried coconut and oats for 1-2 minutes
  • white sesame seeds, black sesame seeds and aliv together for 1-2 minutes
Each time, set them aside to cool down.
Transfer the flax seeds mixture in a blender jar and grind to coarse powder.
Add the ground flax seeds mixture to sesame seeds mixture. Add green cardamom powder, nutmeg powder and jaggery syrup and mix well.
Shape into laddoos.

Anjeer Halwa

 I think the original recipe is from Tarla Dalal. It takes 10 minutes to make and is very wholesome and yummy.


Ingredients:
24 (200 grams) dried figs (anjeer) 
3 tbsp ghee 
1/2 cup blanched , peeled and ground almonds (badam) 
[Abha: I use regular dry almonds ground to powder in a grinder. Tastes just fine.]

1/3 cup milk powder
4 tbsp sugar
[Anjeer are so sweet anyway - I just used 1.5 - 2 tbsp sugar. It was totally enough. ]

1/4 tsp cardamom (elaichi) powder

For The Garnish 
2 tbsp almond (badam) slivers [ Needless to say, I skipped this step :-)]

Method:
Cook the figs in boiling water for about 3 to 5 minutes. Drain and puree them in a food processor. Keep aside.

Heat the ghee in a heavy bottomed pan, add the powdered almonds and saute over a medium flame for about 2 minutes.

Add the pureed figs, milk powder, sugar with 1/2 cup of water and cook for about 5 minutes till the sugar has dissolved, stirring continuously.

Add the cardamom powder and mix well. Serve hot, garnished with slivered almonds.
