Khichri

Aren't one-pot rice meals the forever best? 

Khichris are the king of rice meals since they have all kinds of goodness - rice, daal, veggies, spices. And they taste good in winters with papad, in summers with raita, and in rains with a hot pickle. Or a combination thereof :)

This is one of my favorite khichri recipes (100% credit goes to chef Kunal Kapur).  

Rice 1 cup, Tur daal .5 cup, Moong dhuli .25 cup, Masoor dhuli. .25 cup

Wash and soak

Add .5 tsp haldi, Salt, 7 cups water

Pressure cook for 3 whistles

In pan, 2 tbsp ghee, Add 2 sabut red chillies

.25 tsp hing, 2 tsp mustard, 2 tsp jeera

Curry leaves

2 tsp ginger paste, 1 tbsp garlic paste

.3 cup chopped onion, 1 green chillie

.5 cup chopped tomato

Salt

Add khichri, Add more water and cook

Add lemon at the end.


Bonus recipe: 

Bengali Khichuri

Ingredients:
  • White jeera
  • daalchini
  • tejpatta
  • chhoto elaichi
  • haldi
  • lal mirch
  • laung - Not To be used in a Bengali Khichuri

  • rice, daal - 1:1 ratio
  • ghee
  • tomato
  • matar
  • onion
  • gaajar
  • onion
  • potato

Preferably don't use pressure cooker
Start with 3x water.
First fry veggies especially, cauliflower peas and carrots, and mix halfway.
