Kaddu with panchforon
Here are 2 recipes for sweet-sour kaddu/petha/sitaphal/pumpkin - the first one is a Bengali version. Thanks to the sites I adapted them from - unfortunately can't credit since I have lost the source.
Add oil to a pan, and panchforan + green chilles + asafoetida. Add chopped ginger + tomatoes along with coriander powder, cumin powder, amchur, fennel powder, seasonings, red chilli powder and turmeric powder. Mix well. Add chopped kaddu . Mix and add 1 tsp gur and 1 cup water. Pressure cook for 2 whistles. Your subzee is ready.
Chopped kaddu/lau
5 phoron yaa safed jeera, Onion, Lal mirch
Then tomato, garlic, ginger
Salt, Little haldi, gur, Hari mirch
Meetha Kaddu
750 gm Kaddu
1/2 cup oil
1/8 tsp asafoetida (heeng)
1 tsp fenugreek seeds (methi dana) - roasted and crushed
1 tsp fennel seeds (saunf) - roasted and crushed
1 tsp cumin seeds (jeera) - roasted and crushed
1 Tbsp thinly shredded ginger
3-4 whole red chillies, Salt - to taste
1/2 tsp turmeric (haldi), 1 tsp red chilli powder
1 Tbsp coriander (dhania) powder, 1 tsp garam masala, 1 Tbsp gur
Tamarind pulp made from 20 gm tamarind
1 Tbsp chopped coriander (dhania) leaves to garnish
